Good move. I like it. If they extend Saffold, that would virtually take care of next yeah on the Offense.

ok. i was doing one to one. i’ll have to try that.

one day. i want to make my own sourdough starter and try to make some bread. if i ever feel inspired enough.

I haven’t done bread yet. I buy the frozen bread dough and thaw it, let it rise, then bake it. I used to use a bread machine, before I just started with the frozen dough.

What’s the Difference between Heavy Cream and Whipping Cream
    Updated on February 1, 2013

Marye Audet-White is an internationally known food writer, food editor for Texas Living, cookbook author, and food blogger.

Heavy cream vs. whipping cream; did you ever wonder if there was a difference and what it might be? Are they interchangeable? Are they two terms for the same product?

Heavy Cream vs. Whipping Cream: The Breakdown

Heavy cream is the part of the milk that carries the fat. In the days before milk was homogenized the cream rose to the top of the milk over a period of a few hours. Many older Americans can remember milk in bottles with a thick layer of luscious cream on the top. When the cream was skimmed off the milk the remaining liquid was referred to as “skimmed milk”.

In the United States regulations state that heavy cream must have a fat content of 30 to 40 percent or more. This gives it a thick, rich texture and a buttery mouth feel. When heavy cream is an ingredient in a recipe it will add these characteristics to the recipe in direct proportion to the percentage of cream to the other ingredients.

Heavy cream and heavy whipping cream are essentially the same thing. For the freshest, richest flavor you want to check the ingredients, however. You want a heavy cream with a short shelf life. Ultra-pasteurized cream has been heated to very high temperatures to make it last longer. During this process it loses flavor and some of its texture characteristics.

When you look at the ingredients on the side of the carton it should list only cream and possibly carrageenan, a seaweed derivative that helps stabilize the cream. If you can buy local, raw cream from a local creamery you are in for a real treat. If not, try to at least get organic cream. It is the least likely to have unnecessary additives and sugars in it.

    Whipping Cream

You may also see a product in your grocer’s dairy case that is labeled whipping cream or light whipping cream. This means that the cream has a lower fat content, often in the 30 to 34 percent range. Cream that has less than 30 percent fat will not whip.

Sometimes this type of cream will have skim milk listed atone of the ingredients and it will have many additives and stabilizers. You may save a little money with this but the end result in your recipe will not be as rich.

    How to Whip Cream

    Freezing Cream

So, you hit an awesome clearance at the grocer and bought a ton of heavy cream. Can it be frozen? Sure! You can freeze heavy cream or whipping cream up to four months. Make sure the container is airtight so that the cream does not pick up flavors from freezer odors.

To thaw it just place it in the refrigerator overnight. Once thawed you can use the cream as you would fresh. You do need to know that the cream will take much longer to whip and you may need to add a little stabilizer to get it to whip up. You can use a teaspoon of vanilla instant pudding quite successfully for this.

Once cream is frozen and then thawed it can develop a grainy texture. This is from fat globules in the cream. Because of this it may be best to use the cream in sauces, soups, and cooked dishes once it has been frozen – or, freeze it in ice cream!

    Choose Quality

Heavy cream vs. whipping cream; which you choose depends a lot on the result you want from your recipe. A cream with a high fat content will always be silkier than a cream with less fat. Also consider that some companies are using skim milk and stabilizers in whipping cream; something that is not allowed under the heavy cream label.

Always read your labels carefully and stick with organic cream whenever possible. You will be surprised at the difference in quality that you get.

i finally got around to making them this morning.

    sausage gravy turned out great.

the biscuits… need to practice that part a little more. not as fluffy as i had imagined it in my mind.

but the gravy was literally gravy. didn’t even need to add more seasoning although i did add some black pepper.

Cool, Invader. You can add more baking powder. You can bump the ratio up to 2 teaspoons of baking powder per 1 cup of flour. I happen to like mine a bit denser.

btw, I just made cream puffs. Classic ‘Pate a Choux’ per Jaques Pepin. They came out great. They are the best I made. They are technically perfect. I also whipped up some 40% heavy cream. It is really hard to find that. Most all you can get is called whipping cream, but it is really only 7% with some derivative out of seaweed to make it whip. Look at the label.

I’m really impressed with Noteboom. I think he’s a future NFL starter.

VB is not the only observer impressed with Noteboom.

So how cool is that? It’s rare. I look back at LOTs taken in the 3rd round from 2006-2015. That’s a decade, and it stops 3 years ago so it’s easier to grade guys.

Okay in that span 22 OTs were taken in round 3. (Impossible to tell how many were originally drafted as LEFT OTs, which makes a big difference.) Of those 22, 2– Jared Veldheer and Terron Armstead–became continuiting starters at LOT.

    That’s 9%.

This is premature of course. He has yet to face real opposing NFL DEs and OLBs, and he may end up at ROT or guard and not LOT.

BUT if he actually does eventually make it at LEFT OT, that’s some great drafting.

    ….

A whole bunch of draftees look good. Good for the Rams. 😉

why does spotrac have the Rams 2019 cap at 44 M, while OtC.com has it at 58+ M?

    Any ideas?

    ..

The total contracts is close. So, I guess, they are using different Salary Cap numbers for 2019.

Source: #Rams and DE Aaron Donald are expected to come to an agreement on a massive deal that would pay Donald $24M per year with gurantees in the $65M – $70M range later this week.

These sources sound better than the other sources.

In addition to the Los Angeles local broadcast on CBS 2 and UniMás 46/KFTR, Rams preseason football will extend to households throughout California, Alaska, Hawaii, Nevada and Utah.

    Alaska, Nevada, Utah?

That’s nice, but how about streaming it in places where people actually live?

That is talking about regular tv, cable etc. I think they will stream to whoever connects with their website at https://www.therams.com/

Vinny says game checks will be a factor. According to this, it starts in preseason for 5th year option players.

NFL Rookie Contracts Explained: Fifth-Year Option

NFL Rookie Contracts Explained: Fifth-Year Option

Every player selected in the first round of the NFL Draft will automatically have a Fifth-Year Option added in his contract. This option cannot be separately attached to the player contract.

The option allows a team to retain a player’s rights for five years rather than the standard four, which is the bonus of selecting a player in the first round. In order to extend the contract, the team must inform the player during the period between the last regular season game of his third contract year and May 3 of the next League Year (Art. 7, Sec. 7, (a), 31).

The Fifth-Year Option is non-negotiable, and the non-compensation terms from a player’s rookie contract will be transferred to the fifth year.

Many terms allowed in other contracts are prohibited from being added into the Fifth-Year Option. These terms include Option Bonuses, Option Exercise Fees, option Non-Exercise fees, Option Buyouts, or any other compensation that stems from the team exercising or declining the Fifth-year option (Sec. 7 (d), 31).

When a team exercises the option, it becomes guaranteed for injury only. If the player is on the team’s roster at the start of the League Year in his option season, his salary becomes fully guaranteed for skill, cap and injury.

The payments are not considered Rookie Salary and do not count toward league or club rookie pools or allocations. The player’s option-year salary is also not subject to the 25% Rule.

The salary of the option year is also the only payment a player is eligible to receive for football services outside of minimum offseason workout per diems and compensation for non-football related team activities.

The salary for the Fifth-Year Option is also different for two types of players: those selected in the top-ten picks and all other first-round selections.

The option for top-ten picks is set at an amount equal to the salary of the Transition Tender (set in Article 10, Section 4 of the CBA) for the player’s fourth contract year. This salary is calculated, to put it simply, by finding the average of the top ten highest Prior Year Salaries for players at the same position. Positions are defined by where a player spent the most plays during the previous season (Sec. 7, (a), 31), unless you ask Jimmy Graham.

For players selected between 11th and 32nd in the draft, the same calculation is used to compute their salaries. The difference lies in what is averaged; rather than the top ten, the 3rd-25th highest Prior Year Salaries for the player’s position will be used.

If a team decides to use its option, the player can face substantial fines for refusing to report to camp on time and/or at all. Players can be fined up to $30,000 per day of training camp missed and a fine equal to one week’s regular season (1/17 of P5 Salary) check for any preseason games missed.

The Fifth-Year Option is intended provide teams with more security when it invests a valuable first-round pick on a player.
