    I like stories like this, putting an historic perspective on a local treasure. Good to see they saved the place. I’d like to try a Finnish pancake. Might have to search for a recipe.

    Here’s my mummu’s (grandma) recipe.

    2 cups of milk (no less than 1%)
    2 eggs
    1 cup of flour
    1/2 cup of sugar

    Low to medium heat.
    Use butter to grease your pan for full effect.

    Super simple, but super tasty. Not exactly recommended by nutritionists I’m sure, but I grew up loving them and still do. My kids also love them.

    I like the Hoito’s better. I’m not quite sure what they’ve got in theirs, however.
